Every step in the vineyard reflects the meticulous handiwork of Springfield Estates: the planting of the older vines required monumental efforts, sometimes even the use of dynamite, to penetrate the hard rock.The vines are planted on a gently south-facing slope with 6060 vines per hectare. The climate is characterized by moderate summers with cool nights and cold winters, while the southeast wind in summer ensures healthy, aromatic grapes. These grapes are harvested at night and immediately protected with dry ice to preserve their freshness and fine aromas. Before bottling, only a 2.5-micron filtration is carried out - a gentle treatment that preserves the natural freshness and complexity of the wine.Intense minerality meets fresh citrus and green apple notes, which are typical of Sauvignon Blanc. Lanzerac Pinotage

The grapes for the Lanzerac Pinotage come from vineyards located at an altitude of between 400 and 420 meters above sea level. The prevailing wind here helps to cool the grapes in hot summers. The soils consist mainly of decomposed granite, which favors the deep growth of the vines and the soil retains water better.Fermentation takes place in stainless steel tanks with regular pumping over. First, second and third-fill oak barrels were used to mature the Lanzerac Pinotage. Maturation took place over a period of 15 months.
