The Neil Ellis Whitehall Chardonnay is a wine that reflects both the terroir and the philosophy of Neil Ellis. The grapes for this Chardonnay come from the Elgin region. A region that is known for its coolness on the Cape and has the most favorable conditions in terms of climate and soil. On the other hand, the Whitehall Chardonnay is characterized by great purity, which is made possible by the meticulous work in the vineyard. The grapes were fermented 100% in barrique barrels. New barrels were used for 25% of this and the rest was processed in second and third-fill barrels. After being harvested by hand, the grapes are pressed for around 36 hours and then fermented in stainless steel tanks. Dabei wurden 60% neue Fässer und 40% Fässer, die schon bereits einmal befüllt waren, verwendet. Die Gärung fand in Eiche statt, teils als natürliche und teils als malolaktische Gärung. Die Reifung erfolgte für 12 Monate in Eichenfässern mit gelegentlichem Rühren vor dem Abfüllen in Flaschen.Dieser Weißwein aus der Region Stellenbosch passt perfekt zu gegrilltem Fisch, weißem und rotem Fleisch.
