The Sauvignon Blanc Constantia is a 100%-Sauvignon Blanc from the growing area Constantia in the Western Cape province of South Africa. Not far from the False Bay, the grapes ripen for this very clear, transparent wine. It has a wonderfully clear structure, mineral and fruity notes and a subtle spiciness. The finale is long lasting.

The Life from Stone Sauvignon Blanc from Springfield Estate in Robertson, South Africa, is an impressive example of the region's exceptional minerality. On the estate's extremely stony quartz soils, the vines thrive in challenging conditions, giving the wine its characteristic pebbly, mineral expression. Every step in the vineyard reflects the meticulous handiwork of Springfield Estates: the planting of the older vines required monumental efforts, sometimes even the use of dynamite, to penetrate the hard rock.The vines are planted on a gently south-facing slope with 6060 vines per hectare. The climate is characterized by moderate summers with cool nights and cold winters, while the southeast wind in summer ensures healthy, aromatic grapes. These grapes are harvested at night and immediately protected with dry ice to preserve their freshness and fine aromas. Before bottling, only a 2.5-micron filtration is carried out - a gentle treatment that preserves the natural freshness and complexity of the wine.Intense minerality meets fresh citrus and green apple notes, which are typical of Sauvignon Blanc. Warwick Professor Black Sauvignon Blanc is a white wine aged in stainless steel tanks. The grapes come from two different plots located in the higher elevations of Simonsberg in Stellenbosch. One was planted in 1985, the other in 2003. The diverse harvest lends the wine complexity, a variety of aromas, and structure. The grapes are harvested by hand early in the morning and transported immediately to the winery. Before pressing, the must remains in contact with the skins for 6–12 hours. The aromatic Sauvignon Blanc is then cold-fermented in stainless steel tanks. The 100-day aging on the fine lees gives the Sauvignon Blanc smoothness and body.Produced in limited quantities, the Warwick Professor Black Sauvignon Blanc displays typical aromas of elderflower, stinging nettle, passion fruit, and lime.
