Dornier Semillon

The Dornier Semillon is an excellent white wine that perfectly unites the fascinating combination of tradition and modern winemaking. This single-varietal white wine comes from a unique single vineyard in Stellenbosch, which offers ideal conditions for grape quality with its weathered granite soil and cool microclimate. With its bright golden color and complex aromas, this wine impressively demonstrates the character and finesse of the Semillon grape.

The grapes are harvested by hand at optimum ripeness, ensuring that the best fruit is carefully selected and sorted in the vineyard. The must is fermented in new and second 300-liter French oak barrels and remains on the lees for nine months. This long ageing on the fine lees gives the wine its rich, creamy texture and additional complexity.

Intense aromas of lemon zest, fresh hay, caramelized apple and honey unfold on the nose and shape the elegant character of the Semillon. The aromatic diversity continues on the palate with notes of quince, lemon meringue and brioche. The rich and full texture is supported by a balanced acidity and ends in a long, harmonious aftertaste.

Dornier Semillon is an excellent accompaniment to Asian dishes, spicy curries and poultry and pork dishes. Serve this white wine at around 8-10°C to bring out its full aroma and freshness.

Dornier Equanimity Cabernet Sauvignon
The Dornier Equanimity Cabernet Sauvignon comes from the famous Stellenbosch wine region and embodies the spirit of a unique terroir with its deep structure and expressive fruit. Inspired by a retreat away from the noise of everyday life, this wine reflects tranquillity, balance and strength - qualities that make it a special experience for connoisseurs.The grapes ripened under optimal conditions, which enabled a perfect balance between ripeness and freshness. Fermentation took place in open tanks, with the mash being carefully pumped over and punched down four times a day in order to extract the maximum aromas and structure from the berries. The wine then matured for 18 months in French oak barrels, 35% of which were new, giving it a subtle, elegant woody note and additional complexity.Visually, the Dornier Equanimity Cabernet Sauvignon is an intense black cherry red. The nose is dominated by notes of cassis and black berries, accompanied by hints of cigar box, pencil shavings, subtle oak and a fresh hint of mint. On the palate, it impresses with dense, concentrated fruit aromas, elegant, well-integrated tannins and a long-lasting, balanced finish.This powerful yet elegant red wine is an excellent accompaniment to hearty beef, lamb and game dishes and develops its full potential at a drinking temperature of around 16-18 °C.

The Moordenaarskloof Chenin Blanc comes from a unique vineyard on the Keerweerder estate, on the slopes of the Stellenbosch Mountains. This small but versatile parcel is characterized by three different soil types, which give the wine remarkable complexity and depth. Since its planting in 1986 at the foot of the Moordenaarskloof at an altitude of 230 meters, the vineyard has been characterized by a natural balance of growth and yield, which is reflected in the quality of the grapes.The grapes are harvested by hand in the cool morning hours at the beginning of February and gently pressed. After a cold, natural clarification of the must, fermentation takes place in old 300-liter French oak barrels. The wine remains on the lees until bottling, which gives it a creamy texture and a special fullness. Gentle production with minimal intervention guarantees the authentic expression of the terroir and the Chenin Blanc variety.In the glass, the Dornier Moordenaarskloof Chenin Blanc is a light, pale straw yellow. The name ‘Holden Manz Visionaire’ stands for something special. It represents the attempt to create an expressive wine consisting of 6 different grape varieties - and the winery succeeded! The interaction of the single grape varieties was a real challenge for the winemaker as he had to take the most diverse aspects into consideration. The grapes were selected from various vineyards with different types of soil. The ageing was carried out in 225-litre French oak casks, of which 20% were new and 80% were second- and third-fill barrels. The wines were aged for 24 months before they were blended and bottled, resulting in a wine of extreme complexity that shows a perfect balance between residual sugar and acidity. On the nose, it pampers your senses with a variety of aromas such as notes of mulberries and currants as well as fine nuances of white pepper and violets. The Holden Manz Visionaire is elegant and smooth on the palate, with a medium body. The palate is predominantly characterised by notes of red and black fruit and an exceptional minerality, wonderfully rounded off by skilfully integrated, strong tannins.
