Sauternes is a French wine-growing region known for its noble sweet white wine. It belongs to the Bordeaux wine-growing region. Sauternes wines are mainly produced from the Sémillon, Sauvignon Blanc and Muscadelle grape varieties. This is also the case with Château Filhot Sauternes. The Sémillon grape makes up 60 percent of this wine, as it is particularly susceptible to botrytis. This so-called botrytis is a quality-enhancing process in which sugar and aromas accumulate in the grape, forming the basis for exquisite sweet wines. Sauvignon is used at 36% and gives the wines the necessary acidity. The Muscadele grape is used at 4% for its aroma.
Fermentation of the wine takes place in stainless steel tanks at a temperature of 19 - 21°C. The length of fermentation is 10 - 30 days, depending on the grape variety and concentration. 10 months later, the grape juices are blended. The white wine matures for a total of 2 years in French oak barrels, 1/3 of which are new.
Château Filhot Sauternes has a honey-like sweetness accompanied by apricot, peach and notes of caramel and almonds.
Serve the wine with traditional dishes such as foie gras, duck liver, pâté and fruit desserts.
