Die Trauben für den FAY Cabernet Sauvignon stammen zum überwiegenden Teil aus den mittleren und unteren Parzellen des Fay-Weinbergs, wo sie die charakteristischen roten Fruchtaromen besonders schön und intensiv entfalten. Nur eine kleine Partie von knapp 10% liefern die östlich gepflanzten Rebreihen, die dem Blend noch etwas mehr Kraft und Fülle verleihen. Alle Trauben werden nach Parzellen getrennt vinifiziert, erst jetzt zum FAY-Blend vermählt und für 18 Monate in französischen Eichenholzfässern (80% neu, 20% aus einfacher Belegung) zur Reife gelegt, um hier in aller Ruhe die einzigartige Balance von saftiger Frucht, Kraft und Eleganz zu entfalten, die den FAY Cabernet Sauvignon so unverkennbar prägt.

Der Stags Leap FAY Napa Valley Cabernet Sauvignon zeigt sich in tiefem Rubin- bis Pflaumenrot. Der amerikanische Rotwein entzückt mit seinem klassischen FAY-Bouquet mit dichten, saftig fruchtigen Aromen von süßen Kirschen, Pflaumen und schwarzen Johannisbeeren, elegant unterlegt mit feinwürzigen Eichenholznoten, Anklängen von Sandelholz, Lakritz, Blüten und Waldboden (Moos, Unterholz). Am Gaumen ist der erstklassige Cabernet Sauvignon kraftvoll, saftig, fruchtbetont (wieder süß gereifte Kirschen, Pflaumen), mit sanften Noten von Karamell und Gewürzen, die raffiniert den fruchtigen Charakter des Weines unterstreichen. Fest strukturiert und zugleich sanft, mit eleganter Balance von seidigem Tannin und frischer natürlicher Säure - durch die dominante Frucht bereits früh zugänglich, doch zugleich mit vielversprechendem Lager- und Reifepotenzial ausgestattet.

Am Gaumen ist der Wein kraftvoll, intensiv und fest strukturiert, doch mit der klassischen Eleganz von Stag’s Leap. With each vintage of the acclaimed Private Reserve Cabernet Sauvignon, the Beringer winemaker chooses the best lots from his reserve vineyards in the Napa Valley, each of which demonstrate remarkable expression of terroir. The wine is full of aromas of wild flowers and lavender. It is multi-dimensional and layered on the palate, offering enticing aromas of juicy blackberries, boysenberries and smoke, along with notes of tobacco, a little graphite and lots of baking spices. Notes of brown spice and sweet mint are profound in the glass. Dense and well-structured, its supple tannins are complemented by notes of espresso, mocha and balanced with a silky and elegant finish. The winery describes the 2014 vintage as follows: ‘2014 was a dream vintage for the Napa Valley along the lines of the recent outstanding vintages of 2012 and 2013. Although California’s drought brought another dry winter, the growing season started with a warm, dry spring and relatively early bud break. Summer was mild and consistent with even, warm temperatures throughout. The overall outstanding quality and fruit characteristics in this vintage will make Cabernet Sauvignon the highlight of the season.’The wine was aged in hand-selected, custom-toasted barrels of new French Nevers oak (100% new).
