Vanita Nero d'Avola Appassite Sicilia DOC

Die Trauben wurden für etwas mehr als 2 Wochen länger am Rebstock belassen, damit sie einen wesentlichen Teil der Flüssigkeit verlieren. Der Wein erhält dadurch eine Komplexität und höhere Restsüße ohne an Frische zu verlieren. Durch die an die Gärung anschließende Lagerung in französischen und amerikanischen Eichenfässern bekommt der Vanita Nero d Avola Appassite eine schöne Struktur und fein geschliffene Tannine. Im Glas zeigt sich eine rubinrote Farbe. Der Geschmack ist geprägt von roten Beeren, Kirschen und Pflaumen. Am Gaumen verbleibt eine eindrucksvolle Würze und Noten von Schokolade.

Der Vanita Nero d Avola Appassite passt perfekt zu gegrilltem, gebratenem oder schonend gegartem Fleisch.

The Baglio Gibellina Passimiento is an exceptional composition of flavors from Baglio Gibellina, the traditional Sicilian winery.The Nero d'Avola and Frappato grape varieties come from the province of Trapani and form the basis for this red wine. Der Camivini Tank Nº 26 Nero d'Avola Appassimento IGT aus Sizilien wird aus der für Sizilien typischen Rebsorte Nero d'Avola hergestellt. Von den Einheimischen wird diese Rebsorte „Principe Siciliano“ (sizilianischer Prinz) genannt. Der Ausbau erfolgt im hölzernem Gärtank. In der Nase Aromen von Frucht und Mandeln. Am Gaumen ist der italienische Rotwein leicht und trocken mit Aromen von Rosinen, Backpflaumen und mediterranen Gewürzen. Der lange Abgang hat eine dezente Schokoladennote.Das besondere an diesem Appassimento ist, dass die Trauben direkt am Rebstock trocknen. Sie werden erst geerntet, wenn sie den Großteil des Wassers verloren haben. So entsteht eine dichte und intensive Aromatik mit einer leichten Rosinennote und harmonischer Restsüße. Diese Methode wird TANK-Verfahren genannt - eine neue Auslegung des Appassimento-Verfahrens. Beim klassischen Appassimento-Verfahren trocknen die reifen und gesunden Trauben auf luftigen Gestellen oder in gut belüfteten Kisten.Der kraftvolle Nero d'Avola passt gut zu kräftigen Wildgerichten, Braten und gut gereiftem Käse.
