Graham’s "The Tawny" Reserve Tawny Port

The Symington family has been producing premium port wines in the Douro valley for five generations now. They put special emphasis on traditional production methods but by no means forget the innovations. The family is still directly involved in the production; the cellar master Charles Symington created this port himself.Graham’s The Tawny is his personal interpretation of a fine port wine aged in wooden casks. The Tawny matured for an average of 7-9 years in oak casks, and was partially blended with considerably older port wines in order to give it more complexity and character.This wine is well-balanced with the abundance of aromas of black and red fruit that wonderfully unite with notes of oranges, orange peel, cinnamon, figs, raisins and plums to create this outstanding taste experience.This amber-coloured port wine is exceptionally aromatic and full-bodied. With regard to the production process and the type of wine, the Penfolds Father Grand Tawny is similar to a port wine, though it is not allowed to bear the protected term ‘port’. However, this does not diminish the wine’s quality and characteristics - on the contrary, Penfolds, Australia’s most famous winery, has produced a genuine delight. The different base wines are at least 10 years old. Wines of an average of 15 different vintages unite to create the Penfolds Father Grand Tawny, thus ensuring that the nuances of each vintage produce a concentrated Tawny. The base wine is traditionally enriched with specially distilled alcohol containing between 78 and 85 of alcohol by volume, simultaneously increasing both the Tawny’s alcohol content and its complexity. In the glass, the Father Grand Tawny is a light brown of medium intensity with hints of yellow and green at the rim. On the nose, it offers wonderful notes of oak, chocolate, plums and roasted nuts, complemented by nuances of cloves and anise. Penfolds Grandfather Rare Tawny 20 Years

Dieses Verfahren findet Anwendung beim Sherry, Brandy oder Port. Beim Grandfather Rare Tawny werden einzelne Chargen verschiedener Rebsorten in getoasteten Eichenfässern gereift. Die Kernauswahl der Sorten bilden dabei die Rebsorten Mourvedre, Shiraz, Cabernet Sauvignon und Grenache. Wobei in einzelnen Jahren auch andere Rebsorten zum Einsatz kommen. Nach 14 Jahren werden die Weine zur ersten Stufe der Solera, dem Grundwein, zusammengemischt. In sechs weiteren jährlichen Stufen wird jeweils etwa ein Drittel des Weins aus der nächstjüngeren Stufe hinzugefügt. Dieses lässt sich als eine Art rollierendes Verfahren beschreiben. Nach der sechsten Stufe liefert der Wein für die Flasche ein durchschnittliches Mindestalter von zwanzig Jahren. Der Wein wird am Schluss mit einem Destillat von 78 bis 85% Alkohol aufgefüllt, bis ein Gesamtvolumen von 20% erreicht wird. Die Bezeichnung Grandfather stammt aus dem Jahre 1915, damals hat die Familie Penfolds erstmals ein Eichenfass mit der Mischung aus dem Tawny Material für die Verwendung des Solera Verfahrens reserviert. Aufgrund des Alters dieses Weines nannte man den Wein Grandfather. Die Farbe des Penfolds Grandfather Rare Tawny 20 Years ist in ein intensives Gelbbraun gehüllt. Durch die lange Fassreifung zeigt sich am Rand eine typische gelbgrüne Zeichnung ab. In der Nase präsentiert sich der Wein mit Noten von Lakritz und gerösteten Nüssen, sowie mit einem Duft nach Obstkuchen und Rosinen. Trotz des Alters deutet sich eine intensive Frische an. Am Gaumen zeigt sich eine schöne Cremigkeit und Ausgereiftheit. Klassische Vanille Aromen runden den Geschmack leicht süßlich, voll und rund ab. Im Abgang dominiert nochmals Frische und Frucht.
